Gluten Free Chocolate Cupcakes (Vegan)

 Here's a recipe for Gluten-Free Vegan Chocolate Cupcakes:


Ingredients:


1 cup gluten-free all-purpose flour (make sure it contains xanthan gum or add 1/4 teaspoon if not)


1/2 cup cocoa powder (unsweetened)


1/2 teaspoon baking soda


1/2 teaspoon baking powder (gluten-free)


1/4 teaspoon salt


1/2 cup coconut sugar or other sweetener of choice


1/2 cup non-dairy milk (such as almond or oat milk)


1/4 cup vegetable oil or melted coconut oil


1 teaspoon vanilla extract


1 tablespoon apple cider vinegar or lemon juice


1/2 cup boiling water (to make the batter smooth)



Instructions:


1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it.



2. Mix the Dry Ingredients: In a large bowl, whisk together the gluten-free flour, cocoa powder, baking soda, baking powder, salt, and coconut sugar until well combined.



3. Add the Wet Ingredients: Add the non-dairy milk, vegetable oil, vanilla extract, and apple cider vinegar (or lemon juice) to the dry ingredients. Stir well until the batter is smooth.



4. Add Boiling Water: Carefully add the boiling water to the batter. The batter will be thin, but that's normal and will help create moist cupcakes.



5. Fill the Cupcake Liners: Pour the batter into the cupcake liners, filling them about 2/3 full.



6. Bake: Bake the cupcakes for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.



7. Frost (Optional): Once the cupcakes are cool, you can frost them with your favorite vegan and gluten-free frosting (such as chocolate avocado frosting or coconut cream frosting) or enjoy them plain.
