Chicken Meatballs

Here's a simple recipe for Chicken Meatballs:

Ingredients:

1 lb ground chicken

1/4 cup breadcrumbs (regular or panko)

1/4 cup grated Parmesan cheese (optional)

1/4 cup chopped parsley or basil

1 egg

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

Salt and pepper to taste

1-2 tablespoons olive oil (for frying or baking)

1/2 cup marinara sauce (optional, for serving)

Instructions:

1. Preheat Oven (Optional): If you plan to bake the meatballs, preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

2. Mix the Meatball Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, oregano, salt, and pepper. Use your hands or a spoon to mix everything until well combined. Be careful not to overmix, as this can make the meatballs tough.

3. Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should get about 12-16 meatballs depending on size.

4. Cook the Meatballs:

To Fry: Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs and cook for about 5-7 minutes, turning occasionally, until golden brown on all sides and cooked through. You can check the internal temperature; it should reach 165°F (74°C).

To Bake: Place the meatballs on the prepared baking sheet and bake for 15-20 minutes, or until cooked through and golden brown on the outside.

5. Serve: If you like, warm up some marinara sauce in a pan and add the meatballs to coat them, or serve the meatballs with the sauce on the side. Serve over pasta, in a sandwich, or with a side of vegetables.

Enjoy your delicious, juicy chicken meatballs!
