Ingredients


For the Stir Fry


2 boneless, skinless chicken breasts, thinly sliced


1 tbsp olive oil or vegetable oil


1 bell pepper, sliced


1 medium carrot, julienned or thinly sliced


1 cup broccoli florets


1 small zucchini, sliced


1/2 red onion, thinly sliced


2 cloves garlic, minced


1-inch piece of fresh ginger, minced (optional)



For the Stir Fry Sauce


3 tbsp soy sauce (or tamari for gluten-free)


1 tbsp oyster sauce (optional)


1 tbsp honey or maple syrup


1 tbsp rice vinegar


1 tsp sesame oil


1 tbsp cornstarch mixed with 2 tbsp water (to thicken the sauce)

2 green onions, sliced

Instructions


1. Prepare the Stir Fry Sauce


In a small bowl, whisk together soy sauce, oyster sauce (if using), honey, rice vinegar, sesame oil, and cornstarch-water mixture. Set aside.



2. Cook the Chicken


Heat 1 tbsp of oil in a large skillet or wok over medium-high heat.


Add the sliced chicken and season with salt and pepper. Stir fry for 4-5 minutes, until the chicken is cooked through and lightly browned.


Remove the chicken from the skillet and set it aside.



3. Cook the Vegetables


In the same skillet, add a little more oil if needed.


Add the garlic and ginger (if using) and sauté for 30 seconds until fragrant.
