BBQ Salmon BLT Salad
BBQ Salmon BLT Salad is a flavorful and satisfying salad that combines the smoky richness of BBQ salmon with crispy bacon, fresh lettuce, and the classic BLT ingredients. This salad is perfect for a light dinner or a healthy lunch that feels indulgent without being too heavy.
Ingredients:
For the BBQ Salmon:
2 salmon fillets (skin on or off, depending on preference)
2 tbsp BBQ sauce (your favorite kind)
Salt and pepper, to taste
For the Salad:
6 cups mixed greens or Romaine lettuce, chopped
4 slices bacon, cooked and crumbled
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/2 red onion, thinly sliced (optional)
1/4 cup avocado, diced (optional)
1/4 cup shredded cheese (optional, such as cheddar or Monterey Jack)
For the Dressing:
2 tbsp ranch dressing or creamy vinaigrette (you can use a lighter option or make your own)
1 tbsp BBQ sauce (for a smoky kick)
Instructions:
1. Cook the Salmon:
Preheat your grill or a grill pan over medium-high heat.
Season the salmon fillets with salt and pepper. Brush the top of the fillets with BBQ sauce.
Place the salmon fillets on the grill, skin-side down (if applicable). Grill for 4-5 minutes on each side or until the salmon is cooked through and easily flakes with a fork.
Once cooked, remove from heat and set aside to cool slightly. Then, flake the salmon into large chunks.
2. Prepare the Salad:
While the salmon cooks, prepare the salad by arranging the mixed greens or Romaine lettuce in a large salad bowl.
Add the crumbled bacon, cherry tomatoes, cucumber, red onion (if using), and avocado (if using). Toss gently to combine.
3. Make the Dressing:
In a small bowl or jar, whisk together the ranch dressing and BBQ sauce until well combined. Adjust the amount of BBQ sauce to your preference for more or less smokiness.
4. Assemble the Salad:
Add the flaked BBQ salmon to the top of the salad.
Drizzle the BBQ ranch dressing over the salad and toss gently to combine. If you like, sprinkle with shredded cheese for extra flavor.
5. Serve:
Serve the salad immediately for a fresh and satisfying meal.
Tips:
Add extra crunch: For added texture, you can toss in some crispy tortilla strips or croutons.
Make it spicy: For a bit of heat, add sliced jalapeños or a drizzle of hot sauce on top.
Grilled veggies: You can also add grilled corn, bell peppers, or zucchini to the salad for more flavor and color.
This BBQ Salmon BLT Salad combines the smoky flavor of BBQ salmon with the freshness of the classic BLT ingredients, making it a unique and delicious salad perfect for a summer meal or a light dinner!
