Ingredients:


1 can (15 oz) pumpkin puree


1 can (14 oz) full-fat coconut milk (chilled overnight)


1/4 cup maple syrup (or other sweetener to taste)


1 tsp vanilla extract


1/2 tsp ground cinnamon


1/4 tsp ground nutmeg


Pinch of salt


1/4 tsp ground ginger (optional, for extra warmth)


1/2 cup whipped coconut cream (optional, for extra lightness)

Ground cinnamon


Crushed graham crackers

Instructions:


1. Prepare the Coconut Milk:


Chill the can of coconut milk overnight in the fridge. This will allow the coconut cream to separate from the liquid, making it easier to whip.


Open the can and scoop out the thick coconut cream into a bowl, discarding any remaining liquid or reserving it for another use.



2. Mix the Pumpkin Mousse:


In a large mixing bowl, combine the pumpkin puree, maple syrup, vanilla extract, cinnamon, nutmeg, salt, and ginger (if using).


Using a hand mixer or whisk, mix until smooth and well combined.
