Pinni Recipe

Yields: 20-25 pieces

Prep time: 20 minutes

Cook time: 25-30 minutes

Ingredients:

 * 2 cups whole wheat flour (atta)

 * 1 cup powdered sugar

 * 1 cup ghee

 * 1/2 cup chopped almonds

 * 1/2 cup chopped cashews

 * 1/4 cup chopped pistachios

 * 1/4 cup sesame seeds

 * 1/4 cup poppy seeds

 * 1 tablespoon grated ginger

 * 1 teaspoon cardamom powder

 * 1/4 cup edible gum (gond)

 * Pinch of salt

Instructions:

 * Roast the flour: Heat ghee in a heavy-bottomed pan. Add the whole wheat flour and roast on low heat, stirring continuously, until it turns light brown and fragrant.

   

 * Roast the nuts and seeds: Add the chopped almonds, cashews, pistachios, sesame seeds, poppy seeds, and edible gum to the pan. Roast for a few minutes until fragrant.

   

 * Add spices: Add the grated ginger, cardamom powder, and salt. Mix well.

   

 * Combine ingredients: Remove the pan from the heat and let the mixture cool slightly. Add the powdered sugar and mix well until all the ingredients are combined.

   

 * Shape the pinni: Grease your hands with ghee and shape the mixture into small balls or patties.

   

 * Serve: Serve immediately or store in an airtight container for up to a week.

Tips:

 * You can adjust the amount of sugar to your taste.

 * For a richer flavor, you can add a tablespoon of khoya (milk solids) to the mixture.

 * You can also add other nuts and seeds to the pinni, such as walnuts, raisins, and sunflower seeds.
