Paneer Paratha: A Flavorful Delight

Paneer paratha is a popular Indian flatbread filled with a delicious paneer (cottage cheese) stuffing. It's a versatile dish that can be enjoyed for breakfast, lunch, or dinner. Here's a recipe for both plain layered and stuffed paneer paratha:

Ingredients:

 * For the Dough:

   * 2 cups whole wheat flour

   * 1/2 teaspoon salt

   * 1 tablespoon oil

   * Water as needed

 * For the Paneer Stuffing:

   * 200 grams paneer, crumbled

   * 1/2 teaspoon red chili powder

   * 1/4 teaspoon turmeric powder

   * 1/2 teaspoon garam masala

   * 1/4 teaspoon cumin powder

   * 1 green chili, finely chopped

   * 1 tablespoon chopped coriander leaves

   * Salt to taste

Instructions:

1. Prepare the Dough:

 * In a mixing bowl, combine whole wheat flour, salt, and oil.

 * Gradually add water and knead into a soft and pliable dough.

 * Cover the dough with a damp cloth and let it rest for 30 minutes.

2. Make the Paneer Stuffing:

 * In a bowl, combine crumbled paneer, red chili powder, turmeric powder, garam masala, cumin powder, green chili, coriander leaves, and salt.

 * Mix well until all ingredients are evenly distributed.

3. Prepare the Layered Paratha:

 * Divide the dough into equal-sized balls.

 * Roll out each ball into a thin circle.

 * Apply a thin layer of oil or ghee on the rolled-out dough.

 * Fold the dough into half, then into quarters, and finally into eighths.

 * Roll out the folded dough into a thin circle again.

 * Cook the paratha on a hot tawa (griddle) using a little oil or ghee, flipping it occasionally until golden brown on both sides.

4. Prepare the Stuffed Paratha:

 * Take a ball of dough and roll it out into a thin circle.

 * Place a spoonful of the paneer stuffing in the center.

 * Bring the edges of the dough together to enclose the stuffing, sealing it tightly.

 * Roll out the stuffed dough into a thin circle.

 * Cook the paratha on a hot tawa using a little oil or ghee, flipping it occasionally until golden brown on both sides.

Serve hot with yogurt, pickle, or chutney.

Tips:

 * For a softer paratha, use a combination of whole wheat flour and all-purpose flour.

 * Adjust the spice level of the stuffing according to your preference.

 * You can add other ingredients to the stuffing, such as chopped onions, green peas, or potatoes.

 * To make the paratha extra flaky, dust it with a little flour before rolling it out.

 * Use a non-stick tawa for easier cooking.
