Ingredients:
* 1 medium bottle gourd (lauki), peeled, seeded, and chopped into 1-inch cubes
* 2 tablespoons oil
* 1 teaspoon cumin seeds
* 1/2 teaspoon turmeric powder
* 1/4 teaspoon red chili powder
* 1/2 teaspoon coriander powder
* 1/4 teaspoon garam masala
* 1/2 teaspoon asafoetida (hing)
* 1/4 teaspoon salt, or to taste
* 1/4 cup chopped fresh coriander leaves for garnish
Instructions:
* Heat oil: Heat the oil in a pan or kadai over medium heat.
* Temper: Add cumin seeds and let them sizzle. Then add asafoetida.
* Add lauki: Add the chopped bottle gourd to the pan and stir well.
* Add spices: Sprinkle turmeric powder, red chili powder, coriander powder, and salt. Mix well.
* Cook: Cover and cook for 10-15 minutes, or until the bottle gourd is tender. Stir occasionally to prevent sticking.
* Add garam masala: Uncover the pan and add garam masala. Stir well.
* Garnish: Garnish with chopped coriander leaves.
* Serve: Serve hot with roti, paratha, or rice.
Tips:
* For a richer flavor, you can add a tablespoon of cashew paste or cream to the curry.
* You can adjust the amount of spices according to your taste.
* To make the curry slightly tangy, add a squeeze of lemon juice before serving.
* You can also add other vegetables like potatoes, peas, or carrots to the curry.
