What you'll need:

 * Almonds: Blanched almonds are best for a finer texture, but unblanched almonds will work as well.

 * Food processor or high-speed blender

Instructions:

 * Prepare the almonds: If using unblanched almonds, you can blanch them at home. To do this, bring a pot of water to a boil, add the almonds, and cook for 1 minute. Drain and immediately place the almonds in a bowl of ice water. This will loosen the skins, which you can then easily peel off.

 * Grind the almonds: Place the almonds in your food processor or blender. Pulse in short bursts, scraping down the sides as needed, until the almonds are finely ground into a flour-like consistency.

 * Sieve (optional): For an extra fine flour, you can sieve the ground almonds through a fine-mesh sieve. This will remove any larger pieces.

Tips:

 * Don't over-blend: If you blend the almonds for too long, they will release their oils and turn into almond butter.

 * Store properly: Store your homemade almond flour in an airtight container in the refrigerator for up to 3 months.
