Cabbage Thoran recipe

 Cabbage Thoran is a delicious and simple South Indian dish, typically from Kerala, made with shredded cabbage, coconut, and spices. Here's a basic recipe:

Ingredients:

 * 2 cups shredded cabbage

 * 1/4 cup grated coconut

 * 2 green chilies, slit

 * 1/4 teaspoon turmeric powder

 * 1/2 teaspoon cumin seeds

 * 1/4 teaspoon mustard seeds

 * 1 sprig curry leaves

 * 1 tablespoon coconut oil

 * Salt to taste

Instructions:

 * Grind the coconut: In a blender, grind together the grated coconut, green chilies, and turmeric powder to a coarse paste.

   

 * Heat the oil: Heat the coconut oil in a pan over medium heat. Once hot, add the mustard seeds and let them splutter. Then add the cumin seeds and curry leaves and saute for a few seconds.

 * Add the cabbage: Add the shredded cabbage to the pan and stir-fry for a few minutes until it softens slightly.

   

 * Add the coconut paste: Add the ground coconut paste to the cabbage and mix well. Cook for another 2-3 minutes, stirring occasionally, until the cabbage is tender and the flavors have combined.

   

 * Season and serve: Season with salt to taste and serve hot with rice or roti.

Tips:

 * For a richer flavor, you can add a pinch of grated ginger to the coconut paste.

 * You can adjust the amount of green chilies according to your spice preference.

 * If you don't have coconut oil, you can use vegetable oil or ghee.

 * Cabbage Thoran can be made vegan by omitting the ghee.
