Aloo Bhindi (Okra with Potatoes)
This is a simple and flavorful Indian dish that combines okra and potatoes in a spicy and tangy gravy.

Ingredients:
* 250g okra (bhindi), washed and cut into 1-inch pieces
* 2 medium potatoes, peeled and cubed
* 1 medium onion, chopped
* 2 cloves garlic, minced
* 1-inch ginger, grated
* 1/2 teaspoon turmeric powder
* 1 teaspoon coriander powder
* 1/2 teaspoon red chili powder
* 1/4 teaspoon garam masala
* 1/4 teaspoon asafoetida (hing)
* 1 tablespoon oil
* Salt to taste
* Fresh coriander leaves for garnish
Instructions:
* Heat oil: Heat oil in a pan or kadai over medium heat.
* Sauté onions: Add chopped onions and sauté until golden brown.
* Add ginger-garlic: Add minced garlic and grated ginger. Sauté for a minute until fragrant.
* Add spices: Add turmeric powder, coriander powder, red chili powder, and garam masala. Sauté for 30 seconds.
* Add potatoes: Add cubed potatoes and mix well.
* Cook potatoes: Cover and cook for 5-7 minutes, or until the potatoes are slightly softened.
* Add okra: Add okra and mix well. Cover and cook for another 10-12 minutes, or until the okra is tender.
* Add asafoetida: Add asafoetida and mix well.
* Simmer: Cook for 2-3 minutes more, or until the gravy slightly thickens.
* Season: Add salt and mix well.
* Garnish: Garnish with fresh coriander leaves and serve hot with roti, paratha, or rice.
Tips:
* For a richer flavor, you can add a tablespoon of cashew paste or cream to the gravy.
* Adjust the amount of spices according to your taste.
* You can add a pinch of kasuri methi (dried fenugreek leaves) for an extra flavor.
