Ingredients:


For the Steak:


1 lb flank steak, sirloin, or your favorite cut of beef


2 tbsp olive oil


1 tsp garlic powder


1 tsp onion powder


1/2 tsp smoked paprika


Salt and pepper, to taste



For the Potatoes:


4 medium potatoes, diced (Yukon gold or red potatoes work well)


2 tbsp olive oil


Salt and pepper, to taste


1/2 tsp garlic powder (optional)



For the Bowls:


2 cups mixed greens or spinach


1 cup cherry tomatoes, halved


1/4 red onion, thinly sliced


1/2 cup shredded cheese (cheddar, cotija, or your choice)


1/4 cup sour cream or Greek yogurt (optional)


Fresh cilantro or parsley, chopped (for garnish)



For the Dressing (Optional):


3 tbsp olive oil


1 tbsp lime juice or balsamic vinegar


1 tsp Dijon mustard


Salt and pepper, to taste



Instructions:


1. Prepare the Potatoes:


Preheat the oven to 400°F (200°C).


Toss the diced potatoes with olive oil, garlic powder (if using), salt, and pepper.


Spread the potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and crispy.




2. Cook the Steak:


While the potatoes roast, season the steak with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.


Heat a grill pan or skillet over medium-high heat and cook the steak for about 4-5 minutes per side (for medium-rare), or longer if you prefer your steak more cooked. Let the steak rest for a few minutes before slicing it thinly against the grain.




3. Assemble the Bowls:


Divide the mixed greens between bowls.
