Mini Muffuletta Meatloaves

 Mini Muffuletta Meatloaves are a fun twist on the classic Muffuletta sandwich, combining savory meatloaf with the bold flavors of olives, salami, provolone, and other typical Muffuletta ingredients. These mini meatloaves are perfect for individual servings with a unique Mediterranean flair.


Ingredients:


For the Meatloaves:


1 lb (450g) ground beef (or a mix of beef and pork)


1/2 cup Italian-style breadcrumbs


1/4 cup grated Parmesan cheese


1 large egg


1/2 cup milk


1/2 teaspoon garlic powder


1/2 teaspoon onion powder


1/2 teaspoon dried oregano


1/2 teaspoon dried basil


Salt and pepper, to taste



For the Muffuletta Topping:


1/4 cup green olives, chopped


1/4 cup black olives, chopped


1/4 cup roasted red peppers, chopped


1/4 cup diced salami (about 4 slices, chopped)


1/4 cup diced provolone cheese (about 4 slices, chopped)


1 tablespoon olive oil


1 teaspoon red wine vinegar


1/2 teaspoon dried oregano


Salt and pepper, to taste




Instructions:


1. Preheat the Oven:


Preheat the oven to 375°F (190°C). Lightly grease a muffin tin or line it with paper liners.




2. Make the Meatloaf Mixture:


In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, milk, garlic powder, onion powder, oregano, basil, salt, and pepper. Mix until all ingredients are well combined.


Divide the meat mixture evenly among the muffin tin cups, pressing gently to form individual meatloafs.




3. Bake the Meatloafs:


Bake in the preheated oven for 20-25 minutes or until the meatloafs are cooked through and have reached an internal temperature of 160°F (71°C). Remove from the oven and set aside.




4. Prepare the Muffuletta Topping:


While the meatloafs are baking, combine the green olives, black olives, roasted red peppers, salami, provolone cheese, olive oil, red wine vinegar, oregano, salt, and pepper in a bowl. Stir until all ingredients are well mixed.




5. Top the Meatloafs:


Once the meatloafs are done baking, remove them from the muffin tin. Spoon a generous amount of the Muffuletta topping onto each mini meatloaf.




6. Serve:


Serve the Mini Muffuletta Meatloafs with extra olive salad on the side if desired, and enjoy a savory, Mediterranean-inspired twist on traditional meatloaf!
