1 tbsp olive oil

1 tbsp taco seasoning (or homemade seasoning blend)

Salt and pepper, to taste

For the Toppings

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 avocado, sliced

1/2 cup salsa or pico de gallo

1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)

1/4 cup fresh cilantro, chopped

1-2 tbsp sour cream or Greek yogurt

Lime wedges, for serving

Hot sauce, for serving (optional)

---

Instructions

1. Cook the Chicken (or Protein)

Heat olive oil in a large skillet over medium heat.

Add the diced chicken (or your choice of protein) and season with taco seasoning, salt, and pepper.

Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and browned. Remove from heat and set aside.

2. Prepare the Rice

If you haven't already, cook the rice according to package instructions.

You can also use cauliflower rice for a lower-carb version.

3. Warm the Beans and Corn

In a small saucepan, heat the black beans and corn over low heat until warmed through, about 3-4 minutes. You can also heat them in the microwave.

4. Assemble the Burrito Bowl

Start by placing the rice as the base of your bowl.

Layer on the cooked chicken (or protein of choice), followed by the black beans, corn, salsa, and cheese.

Top with sliced avocado, fresh cilantro, a dollop of sour cream or Greek yogurt, and a squeeze of lime juice.

5. Serve

Serve the burrito bowl with optional hot sauce or extra lime wedges on the side. Enjoy!
